「永浤牛肉湯」の牛肉湯

台南には名物料理がたくさんあるが、牛肉湯はその一つである。スープがやさしい味で、牛肉が新鮮で美味しく、肉燥飯がお代わりできるのがよい。最近は、台灣南部に行くと、必ず台南市のどこかで牛肉湯を食べるようにしている。新營の「永浤牛肉湯」で牛肉湯を食べた。

「永浤牛肉湯」では、牛肉湯が 100 元で、牛肉湯を頼むと、肉燥飯を三杯まで食べられる。無制限でお代わり自由というわけではないけれど、気分がよい。また、芥蘭牛肉も注文した。芥蘭牛肉も 100 元である。牛肉湯は、時間をかけてじっくり煮込んだスープを、薄切りの牛肉にかけて出してくれる。食べるための薄切り牛肉はスープとは別に用意されているのが素晴らしい。芥蘭牛肉は、芥蘭のシャキシャキとした食感と牛肉の旨味が合わさって最高である。
